Iberico Pork comes from the distinctive Black Iberian Pig. Native to Spain and Portugal, the pigs roam the forest, eating a diet consisting mostly of acorns which impacts the meat directly, giving it a nutty, evocative flavour. We braise our Iberico pork shoulder and serve it with sweet diced apple to accentuate the natural flavours of the meat.
